As a child, I had an aversion to Brussels sprouts. Their bitter taste and unique texture made them unappealing, and I would often push them aside at dinnertime. However, as I grew older, my palate evolved, and I began to appreciate the complexity of their flavor. Now, I absolutely love Brussels sprouts, especially when roasted. The roasting process caramelizes their natural sugars, enhancing their sweet and nutty undertones. Additionally, the outer leaves become crispy, offering a delightful contrast to the tender interior. Experimenting with various seasonings, like balsamic vinegar, garlic, or even a bit of Parmesan cheese, has further solidified my appreciation, transforming a once-dreaded vegetable into a favorite part of my culinary repertoire.
